James Beard Nominated Chef and PAGU owner Tracy Chang has given lectures on the science of hand-pulled noodles at Harvard, MIT, and Barcelona Science and Cooking World Congress.
Our PAGU team will dive into the science of hand-pulled noodles, as well as the methods using vacuum-sealing machines as well as recipes that work at home.
